that means, that 1h video would load at best 6 minutes.

Well, as i said. If you plan to edit 4k videos from that camera, then you need to either realize, that 1h video will load at best 6 minutes from that pi (theoretical speed, that you will not achieve, it will be longer)
or you need better hardware, one with faster network adapters. On both ends - storage AND your PC.
1Gbit network adapter can do around 100MB/s.
your camera can produce 100Mbps videos.
so each minute of recording means a) 6 seconds transfer time over 1Gbit network, 600MB of data.
For 1h video it is 6 minutes of transfer and 36GB of data.
Let me put it this way... several years ago i composed a system for a person who was editing 4k raw footage .
he was working with 400GB per hour.
we ended up building system utilizing RAMdisk

that depends on what drives you plan to use. Appropriate psu for those drives.
Again, that depends on your needs and mainly on your budget. I already told you, that what you need for smooth operation cannot be delivered with raspberry pi and SATA drives.
